well flying, i do have an idea on how to fix things, 1.16 with 0.18 is working fine, none of these "texture bugs" with the lighting are happening there, why don't you copy the 1.16 models and put them in 1.17? that should fix it nice and good!
It isn't the models, they never changed. You are using your truck in a darker environment with artificial lighting. The reason why it is labeled outdated is because the materials are shining too much under a brighter environment with natural light.

Latest game hotfix improved things by quite some margin. Toning down cube maps and specular maps for all materials can probably do the trick.

The game updated, I believe its an automatic thing, mods that arent updated right after the update will be listed as outdated.
