Yup, sadly that's the case here yet again. The line between what I would want to bring vs what I can deliver is quite thick, after the crazy rate of updates of the past months I don't even know what to add now because of that reason...
A suggestion would be some crawler fenders and suspension for the off road fanatic, this is one of the best mods out there but does get stuck on rocks quite easily.
Hi again I saw a parked Land Rover Defender and noticed it had these side steps and they weren't in the mod, could you add them please. --- Post updated --- I don't know if this is a bug or a problem with my custom config, but the right door seems to have an indestructible bit (both sides hit at 30mph)

It can be done with any vehicle. Albeit, probably incredibly difficult. But possible nonetheless.
i know this might sound boring but can you add a hybrid version or a engine/ gearbox that acts like a hybrid with the mpg . could be mild or plug in I wouldn't mind
Maybe a Carabinieri or Polizia skin would be nice for this car, there are no new Defenders in use of these italian forces, but some other Land Rovers are (were)

Nice update! Since you plan to focus on rims next, are you also planning to improve the tire sizes? 225/70 tires don't seem to be an appropriate fit for any of the rim sizes (according to the Tire Rack search...for the US market).

Well, the tire width just needs to be as wide as how Land Rover designed it to be. I'm not a 3D modeler, so I don't know if the program you use provides a tool to measure between two points with different types of units. It's hard to judge in-game if the dimensions are correct. If they are what they need to be, great! You just need to change the text in this case because currently it indicates in the customization menu that the tires are 225/70...225 width and 70 aspect ratio...and that's not matching with the physical dimensions. To keep text consistency, the name of the wheel (rim...whatever's politically correct) size should probably also be looked over as well. Using Tire Rack to shop for factory tires for the '20 Defender (US market), it came with these sizes: 255/70R18 (2.0 models only) 255/65R19 (2.0 and 3.0) 255/60R20 (2.0 and 3.0) 275/45R22 (2.0 and 3.0) I assume it might be the same factory tire sizes for the EU market. I don't know which tire size Land Rover engineers selected for the V8 model.
