My suggestion would be to make a config for a makeshift camper of sorts. Think top gear specials or that transit connect that Alex Kersten from car throttle gave to a homeless friend.
A mattress, a hob, a lamp, a closet, a portable fridge, a portable shower, maybe few jugs, maybe few tools. That’s all you need. Would be awesome!

Point of a demo is indeed to have very little content but still showcase the mod's quality level...
