I have seen before that Windows 10 will by default, backup your documents folder with onedrive.
You could try and investigate if that is the case.

The game uses a folder called 'User Folder', where all your settings, mods and etc. are saved.
The folder is by default located in your Documents folder.

If you have OneDrive enabled on Windows 10, your whole Documents folder goes inside the OneDrive folder and will get synced.
This is not recommended, as it can lock the files from being accessed while they sync, causing various issues.

Click the blue text you see in the message to change your User Folder location to something different.
