I've dabbled a bit with this game, and whilst I'm very much a noob in that I really don't know how to use the more complex editors and cannot even spawn cars to crash into etc, I just enjoy driving around and hitting stuff.

I've seen some epic Youtube videos, like this one and this one where they use some brilliant camera angles and it really enhances the video.

They look like proper motorsport cameras and some of them could be hand-helds. The shot of the wheel bouncing down the street in slow motion is particularly clever.

How are people doing this? I have screen-capturing software and the like but I don't see how you can pause the game or get cameras into position in time to capture your car doing whatever it's doing.

Has there been a replay mode, or mod, made that I've foolishly not made myself aware of?

Any assistance would be appreciated. I like making videos of this nature (I've had plenty of practice with GTA4's replay feature) and would love to try my hand at making a BeamNG video!

J pauses physics. F8 detaches camera from car. Alt+arrow keys allows manipulation of game speed (left decreases, right increases, down sets to 1/8th real time and up sets to normal)

Yeah, or, press Shift+C to go into free camera mode, and then use WASD keys and PageUp, PageDown to move the camera. And, unfortunately, there's nothing like a "replay mode", you will have to record while playing.

I see. It seems to literally be a case of getting the car into a position where you are sure it's gonna look like an awesome crash, pausing the physics, fixing a camera position, and then playing it at half or quarter speed and hoping for the best.

At least there is no limit on distance from car to camera, like there is in GTA4's video editor. ;)
