The model gaps are because the original model was never designed to be taken apart, since it originated from an old low-poly GTA 4 mod that was later ported to GTA 5 by jazim_hammad. If double-sided materials were used, it wouldn't even be a band-aid fix since it just creates an illusion that everything is fully modelled, even though it isn't. The bottom line is that the model needs to be remade from the ground up, which nobody is willing to do, not even me, since it would take a lot of time, effort, skill, and likely money if someone hires an experienced 3d modeller to do it fast and do it right. I've contributed enough to this mod already, and I have other projects I want to focus on outside of this one. Someone else will need to take on this massive task.
As someone who has worked on the mod and after looking into adding a coupe body, there aren't any suitable 3d models for gameplay. That's the reason why a coupe body can't be added. Regarding suggestions, though, the mod's creator himself has said that suggestions aren't being accepted.

can you add a 454 bigblock, ford f150 frame and awd swap, machine gun, tank turret and plane engine and wings?
You can restore it yourself by adjusting the color. Coupe body variants will be added in the future, but John Tanner needs to do model adaptation, and he is now working on his countach project.
