Well, as far as an actual torque curve goes, I really can't say, but for a mid-80's peanut port head 454 with 7.5:1 compression, you'd have about 240 HP and about 300 ft-lbs. I have no idea what that would be in NM. That being said you could very easily make that 300+ HP and 450+ ft-lbs with a different cam, a 750-800 CFM carb, some headers, and a better intake. We used to have a late 70's Winnebago with a Dodge 440 and a 727, it would do 70 on the highway, but thats all it would do.
Sounds about right. Although the fact that your Winnebago, which is older and has a smaller engine, could do 70 means perhaps the air resistance or rolling resistance is too high for the Bounder in BeamNG.

Our Winnebago was 30-something foot, And again, it was still a big block with a 3 speed, and while I don't know what rear gears it had, it could keep up with traffic. *Not the actual one we had, but same model.

If you have any general questions let me know, I have a 32' 1986 Tiffin Allegro. not quite the same motorhome but the running gear should be right. I lived in it for 5 years and did all the maintenance and repairs, so I know a bit about it. (imported from here) ive got a 454 with a 3speed auto. I mostly drove it at 55mph, but she would do more if you had room, into the 70s. never tried pushing her much past that tho, handleing was VERY floaty, it handled like a bathtub on wheels. also I don't remember it being that heavy, id have to check the title, but I think it was only like 15,000 lbs at the most. engine didn't really have anything "special" about it as I recall, it did had a 4bbl quadrajet, cam may have been alittle hotter, sounded mean it idle. as far as gearing goes, not shure about 1st and 2nd, 3rd was 1.00 as most old 3 speeds were, felt like maby 3.90s in the rear (never cracked it open, so I cant be shure). Ive seen rvs with 3.54s and a 3speed and they do ok, granted they were 6.9s not 454s. dont go too low, rvs arnt ment to accelerate fast, theyre ment to get up to speed and stay there.
