I can get 60 on most maps with overclock if I lower the "faces per update" slider.

A GTX 970 or R9 390 should be enough, heck, they're enough for 4K in some games! Although if you want 2K, you have to see that the displays of that resolution are pretty expensive either. Shouldn't go under $250-300

I would get a 390x or a 390. They are plenty fast and the 8 gigs of ram will give those extra pixels a place to hang out.

    390. Plenty.

The price of the monitor isn't an issue. $500-700 [Canadian] is around what I'll most likely be spending when I do purchase a monitor, but I'm building a whole new PC but haven't got a clue what the performance requirement for 2k looks like, from what I know it's pretty flawless these days on most higher end GPUs.

The new GPUs from Nvidia are destroying 2K, a GTX 1070 is more powerful than the GTX Titan X for example. I'd wait a month though, then the new AMD GPUs will come out, and you might get more performance with an R9 490.
And for that money you can probably get a really good one. That's about 400-500 USD, right?

I've already figured out what I'm aiming for with the GPU lineups

Can someone please tell me how much fps you get on 1440p vs 1080p ? Just for comparison sake

You have 78% more pixels, so if you had 60 FPS beforehand, you'll have about 35-40 afterwards. And if you had 100, you'll have 60.
