This is purely for those who are wondering why its happening.
I realized that many vehicles start from a standstill gets going really slowly. After running in 1st person mode with debug I have come this conclusion.
It's because when you shift from neutral to 1st, the rpm drops from idling speed to half that, so if you idle at 1k rpm and you would get like 500rpm when you shift to 1st. At such low rpm there is little to no power and torque from the engine and hence the slow start, so this feels like you went from neutral straight into 2nd or 3rd. This did help me understand why I couldn't do a hill start with the ibishu covet and some other vehicles as gravity pull me down and the engine couldn't get off the below idling speed to climb and just rolled down. I know this doesnt happen in real life (manual car speaking here) because when you shift from neutral to 1st at a standstill, you gradually release the clutch and slowly push the gas so maintain rpm from dipping too low so there isnt this problem.

I know its a long explanation but this took me a month to figure out since i don't actually drive a manual lol.
PS I would like to see a fix for this issue but I dont actually have a clue how to code any of what I said into a mod or anything =/

Yes, this is a known problem. We will overhaul the launch behavior and also add proper manual automatic gears (P R N D 2 1)

On a real car the engine would rev up a bit and the torque converter would kind of act like a clutch.

I think that is part of why hill starts don't work. Another thing is that if you tried to do a hill start with the fully loaded van, it should rev up and slowly pull off as the torque converter builds torque.
