When I drive with manual, I can still shift without engaging the clutch for some reason. I have clutch and throttle assistant disabled.

I dont know, but i think its only for tofu delivery drifts and revving without moving i dont think its implemented yet a super-realistic transmission system, and the clutch assintent is for not stalling the car when its stoped in idle?

OK, lemme explain the might tofu delivery drift:
Takumi fujiwara, an tofu deliverer, drifts his Toyota S. Trueno, using an tecnique that is basicaly pressing the brake pedal (to reduce wheel speed) and pressing the clutch and gas pedal to rev up the engine (he downshift too) finally he releases the clutch and make the rear wheels spin making he drifts. (no handbrake required)
wathc this video at 0:30 its when its starts the drift:

Its not the trueno but is the only video that i've found quikly

Yes. Keep doing that and you will break your gear.
We do not prevent shifting without clutch (yet), but you will get penalized on the long run.

As said above.. drive in like 2nd gear and continuesly shift up and down .. after 20 seconds you break gears.. Or get the "more features" mod, it will make noise when you shift without clutch and show you how much damage each gear has

This technique is called heel and toe downshifting. It's done to keep the driven wheels from locking up when shifting down and preserve the car's balance around a corner :)

You can do that in real life too! Theoretically if you matched the revs perfectly during a gearshift, you don't need to use the clutch. That said, forcing it into gear when the RPMs are not matched will put stress on the synchros, and eventually break something. So while possible, driving without using the clutch will limit the speed at which you can shift gears, and eventually destroy the gearbox if you aren't perfectly smooth

So, it would affect you later in driving? (If car is not reset)

As Slammington suggested, I'm pretty sure that by heel and toe downshifting he actually helps keep the car balanced and then uses the momentum of the car to throw it out of balance to initiate a drift. Heel and toe is really useful but it's hard to pull off in cars with grabby brakes. You can still rev-match without using the brakes like I do to keep the synchros and any passengers happy.
