I'm asking why do both modern ETKs on rwd configurations get stuck in the mud but when I but the gas and the brake at the same time the cars cruise right through the mud

Interesting. I tried it out and OP is right. Even if you floor the gaspedal the engine wont develop any power in the mud because it doesnt rev. By hitting the brakes and gaspedal simultaneously the engine is starting to rev and the car starts to move in the mud. But it only works well with abs, if abs is removed the frontwheels are locking and you'll probably get stuck soon again. Could be the same problem like the broken reverse gear in the last update.
Starting your AWD car on a steep hill road has a similar effect. The engine has hard time time to develop engine speed and it takes awful long to accelerate. Especially with turbo engines because they wont develop much torque until the turbo kicks in at the higher engine speeds. With a RWD car revving the engine in neutral before switching into first gear helps to develop enough torque to accelerate adequately with lots of tiresqueal. But it seems like with awd the engine cant develop enough torque to spin all 4 tires and the engine falls in a rev range where in reallife the engine would die.
The automatic clutch doesnt work properly would be my uneducated guess.

But the automated clutch is working much better in 0.6 than in the last version. Often in 0.5.6 i had to drive back to a flatter part of the road to build up speed for a steep hill. In 0.6 it is slow but most of the time managable to get a start on a steep hill.
