I don't know exactly how to describe what this is, but whenever I've opened up a vehicle's .dae in Blender (even if I don't make any changes), when I go into the game I find that the areas where panels meet seem to be deformed in terms of lighting. So far this has happened with every car I've tried it with. Is there any known way to circumvent this?

That's due to the smoothing groups being a feature of the software used to make the cars in BeamNG (except for 200bx) which Blender doesn't have.
To prevent this you need to use edge split.
I'm not good at Blender so ask someone else how to do this if you don't know already.

Yeah, so use Edge Split. Don't forget to apply modifies when you save it.
