Clutch works, it can overheat too. There is engine braking too, if you shift down and just drop the clutch at middle of turn, you will spin out with RWD. Not sure if there is much more to it.
Set driving mode to realistic by pressing Q. You might also have to disable the clutch assistant in the options menu.

It's possible to kill the engine, but it's not easy to do since the game does clutch work for you. The game will do it's best not to kill the engine. If you have a wheel and pedal setup at home you can map the clutch and kill it all day long.
Many vehicles seem to have bit weak engine braking, but you can of course make a mod and increase dynamic friction parameter. Interesting. Appreciate your help. Can't believe 200 hours in I didn't know there were settings for a fully working clutch. Kinda wish I had a pedal system because with a controller it definitely does not work very easily.
