The V6 is N/A. The 1.0L i3 would not make any sense without a turbo. Still, you can detune it by lowering the boost, raising AFR and changing the cam profile for more low end torque

It is possible, just lower the wastegate pressure to 0 PSI, and you'll have a useless turbocharger. Although I believe that a 80 HP NA 1L engine would be VERY underpowered for a car this size, unless you use the lightweight version of all body panels.

It would be unimaginably slow. If you want a car that slow, just drive the beater Vertex.

scientific experiment done. set the wastegate to the lowest it let me (not exactly 0, but close enough)
the results: oh dear god
compared with pretty much a 1:1 copy with a working turbocharger
