Because you french, I would say a little french village with a forest or somthing like this could be cool : A place like this one !
I personally think that the scenery doesn't matter that much. I think you should search for new and interesting paths that allows us to have fun while driving, and then search if it looks like a real terrain. If it does, then take inspiration on it for the scenery. Anyway, I'd love to see more skycurve like maps, or parkour like ( see Carkour map). Something that makes a good challenge to complete.
What about a desert map? Not like the blackhills map that has hard ground, but with sand that the car would sink into. Kind of like this; some soft sand, and some hard ground:
I think the infamous "Death Road" that Top Gear went along would be lots of fun, it's scenic, and very deadly
I really would like to see some middle eastern highway map. Basically a highway going trough a desert landscape with some small villages.
Ok, I don't know why but desert is my favourit inspiration! And this pics are very nice... And as say @RyvyLo, for a good map, you can't just put a basic road track, you must have a real challenge and have a balance with difficulties And to answer to @Ulrichou86, little villages in france are nice, but where is the challenge? But little national roads are more exciting. With "Geogliph" an addon of World machine you can easily do that , but I am limited to 1024 resolution . The soft is not free, and of course you can't see how the macro is made... (Huuumm after reflection, it give me an idea for a test!)

Oh i see that you are from the 86th department of France like me i agree that Vouneuil-sur-Vienne will be great but also my town of Montmorillon were we could be able to make stunts "à la Jean-Paul Belmondo" in the descent like a cliff street called "la rue Montebello". Sorry for all that private joke stuff but it's funny to see fellows of the same IRL place in such a big internationnal and virtual community.

Maybe someone could make a map like a Baja 1000 but scaled down to like a Baja 25 or something. This would be really cool if I do say so myself.
What about some dunes ? Something like Paris - Dakkar race map? I don't even know if sand dunes are possible but it would be fun to do some jumps whit offroad vehicles on sand
My ideal idea for a map would be a highway in the mountains. For example, two highways that are pretty close to where I live (ignore the watermarks etc, couldn't find better pictures and I don't have time to crop them, etc...) Coquihalla Highway (Highway 5) : Crowsnest Highway (Highway 3) :
