Maybe try expanding out of the JDM comfort zone.

    Drag racing? Trucking? Bangers? Stunting?

As if you couldn't do it with JDM vehicles.
Wood available in only the most expensive trim? This is a modern luxury SUV, not a 90s midsize.
The engines are quite overkill. 400 hp for the lowest trim seems too much. I think it should have about 290-350 (same V6). Deluxe should have it by default and 400 hp version as an option, with V8s being confined to the top two versions.

#1: A 2000s supercar - 2002-2004 Civetta La Rosario - Comparable to an 2002-2004 Enzo Ferrari, has only one trim model.

#2: A super-luxurious car - (don't know a good name, as ETK isn't luxurious enough) - Comparable to a Rolls-Royce from 2015. Has two trims, base and extended wheelbase.

    #3: A 1920s Car - 1920-1927 Gavril Model C - Comparable to a Ford Model T.. Has 5 configs.
Abandoned (lacking power and torque, rusty, unreliable)
Factory New (identical to factory spec Model T)
    Hot Rod (modded)
    Dragster (also modded)
Tractor Conversion Kit (yes, this actually was a thing with the Model T)

#4: A pre-1900 Car - 1880 ETK Motorwagen - Top speed of 12mph, three wheels, and looks more like a motorized carriage. Only one trim.

#5: A trike - (Don't know a good name, probably made by Hirochi) - I'd get why motorcycles can't be in the game yet, as I've seen one that attempted a proper motorcycle (and it could not turn at lower speeds than 60mph/100kph), but you've done trikes before! (Ibishu Pigeon in particular) so try making a trike! Has two trim levels,
base (meant to be more affordable)
racing variant (racing variant has carbon fiber body paneling)

#6: A Go-Kart - (Don't know a good name, probably made by Hirochi or Ibishu) - a small single-seat track toy that makes even the Ibishu Pigeon seem big! Has three trims, amusement park version (max speed of about 10mph, and has the steel bumper that surrounds the entire thing), entry level one (top speed of around 45mph), and a superkart variant (capable of 120-130mph, meant for professional racing)

#7: A Prius Equivalent - 2013-2018 Ibishu Koritsu - gets a million miles per gallon, at the cost of performance. Has three trims
Hybrid (low-power engine and a hybrid motor, very slow, but gets good fuel economy)
Electric (all-electric variant, low range and even slower than the hybrid)
"Slow" (engine swap for a V8, lowered suspension, racing slicks, carbon fiber front lip and diffuser, carbon fiber high-downforce spoiler, carbon fiber hood, and lots of weight removal mods)

    Gavril Meister (1958-1960)
    It is a...

German classic executive sedan from the German division of Gavril. Based off the Kapitan P1, but with the rear of the Delray and a higher roof-line inspired by the Saratoga sedan.

    Configs:
    • Base - equipped with a 2.5 L/80 PS I6, a chrome trim, a 3-speed manual (or a 4-speed overdrive), and 14'' chrome steelies.
    • Beater - same as above, but with a worn out interior, 15'' wheels with missing hubcaps, rusted skin, and a weaker I6.
    • Custom - same as the Base model, but with lowered suspension, 15'' custom wheels, a supercharged I6, and a custom grille.

Maybe Kühn as a brand name? Around that time, there wasn't many car brands in the late 19th century-early 20th century that were known by their acronym.

The wood trim... maybe you're right.

I wanted to make it a realization of the "very fancy Cadillac" idea, and it'd be about two steps above a CT6 (which picks off with a 270 HP turbo four) and a step above some fancy, but not coupe-crossover-fancy, car. The closest real analogue, the BMW X6, starts at 306, and that's more of an X8 sort of car.

"Dream Car" is a too descriptive name.

I only based the model name off the fact that the actual Kapitan P1 was well-known for it's American "dream-car" vehicle style. I'm stumped on finding a German word that could work for a model name.

Maybe call it "Gavril Meister", built by Gavril's German division?

Vox populi established Gavril as having an Euro counterpart, and just like Gavril of America is a mix of Ford and Chevy, Gavril of Germany (later merged with British, Italian and French divisions) could be a mix of Ford Köln and Opel.

You don't need to post the brand's description, it's just a Gavril.

2010s hybrid RWD British full-size luxury sedan. Based off the Bertone B99 concept, but with a more rounded front combined with generic design, a similar rear from the XJ, and the interior of the 5-Series.
