How about a jeep or ford explorer? I used to own an explorer me and my dad lifted about 13" and put some 42's on because we was bored one day. And the jeep would just be cool to have. I would create them myself but im not exactly tech savvy.

Yes and no. When the devs feel like they would need more cars in Game they would look around here and look for a good idea. Then Gabe or mitch sat down and think about how the car should look like. But as you see like the covet is a mix of a civic with some other Hondas
Most likely, no. The company doesn't have the money to get licenses for production cars (not that car companies would want their cars in BeamNG, for risk of being considered unsafe). And the devs are already pretty busy with the list of WIP official vehicles. Modders will make mods at their own will, so it's basically going to be what they want, not what the community wants. They honestly don't have any reason to release mods, other than to share them (and get irritated when credit isn't given ). They aren't paid (unless a member of the community pays them).
